"A refined, sophisticated dining destination with an intimate atmosphere suited to date nights, celebrations and special occasions." That is how the opening announcement described Brisé, the French-inspired bistro that opened at 6301 Meeting St. on Sept. 16. The surprising part is who wrote it. Brisé comes from Debi Hatton, who opened the Crust & Crumb bakery in Norton Commons two years ago and is now running a dinner room right next door.
Brisé is one of three openings. In roughly six weeks this fall, Meeting Street gets three new places to eat, and all three come from operators known for daytime food. The baker is now serving dinner. The breakfast-and-lunch brand from Middletown is serving dinner for the first time. A dessert shop is moving in a few doors from both. The neighborhood's evening hours are being built from the morning side.
Brisé serves only dinner. The restaurant is about 1,700 square feet. It opened with dinner Wednesday through Sunday, and afternoon tea on select weekends is planned once dinner service is settled. Brunch is a longer-term goal. Its current listing shows dinner from 4:30 to 9 p.m. on those five nights. It names KeJuan Smith as executive chef and culinary director and lists counter seating plus a patio.
The bakery shows up all over the menu. Baguettes, desserts and house-made ice creams are all made on site, and a dedicated bread service comes with the meal. The dessert program pairs French-inspired dishes with Kentucky ingredients such as sorghum. Between courses, guests get small chef-selected bites and palate cleansers, and there is a chef's table option. The posted menu, updated Sept. 27, includes beef tartare, French onion soup, steak frites, roast chicken, lamb loin, barramundi and butternut agnolotti.
So a business that already has the morning trade on this block has opened a second door for the evening, in the space next to its first.
The House of Marigold is taking the same step from the opposite direction. Adrienne and Kris Cole opened the Middletown flagship in 2023 with full-service breakfast and lunch, seasonal comfort food and Southern hospitality. Kris Cole is the culinary director. The Norton Commons location opens Oct. 8 at 10715 Meeting St. It is the company's first restaurant with dinner service, along with craft cocktails and an expanded coffee program.
The posted hours stretch the brand's day well past lunch:
The opening was originally set for August. A delayed renovation pushed it to Oct. 8. The space is the former Gustavo's Mexican Grill, and longtime Norton Commons neighbors will remember an earlier tenant too. In September 2019, the Courier Journal reported that Gustavo's would take over the space after Citizen 7 closed that August. Marigold is the third restaurant at 10715 Meeting St. in about seven years, and the first one arriving with a breakfast-to-dinner schedule.
Marigold is also preparing a NuLu location this fall. Before either opened, the Coles ran a set of preview experiences at both locations. The entry tier was a $150 Rosé Soirée happy hour, and the program also included a biscuit-making class with Kris and a flower-to-table dinner.
The third opening is right next to Marigold. The Peach Cobbler Factory is set to open during Halloween week at 10713 Meeting St., Suite 101. It will be the chain's third Louisville-area location. The 1,565-square-foot shop plans dine-in, takeout, delivery, catering and a patio. The full menu includes cobblers, banana pudding, cookies, brownies, cinnamon rolls, cheesecakes, shakes, ice cream, savory options and dessert flights. Hours and ordering details were still to be announced as of the latest reporting.
The shop is about the same size as Brisé, which puts two compact, patio-equipped spaces at either end of this fall's changes. One is a dinner room with a chef's table. The other is a dessert counter next to a restaurant that serves until 10 p.m. on weekends.
| Address | Business | Status as of Oct. 1, 2026 | Evening service |
|---|---|---|---|
| 6301 Meeting St. | Brisé | Open since Sept. 16 | Dinner Wed.–Sun., 4:30–9 p.m. |
| 10715 Meeting St. | The House of Marigold | Opens Oct. 8 | Daily until 9 p.m., 10 p.m. Fri.–Sat. |
| 10713 Meeting St., Suite 101 | The Peach Cobbler Factory | Halloween week | Hours not yet announced |
The schedules fit together on their own. Brisé is closed Mondays and Tuesdays, and Marigold serves dinner every night of the week. On Friday and Saturday, Marigold stays open an hour later than Brisé. These three join places already doing business in Norton Commons, including Alchemy Restaurant and Karem's Grill & Pub.
The openings fall in the middle of a full month on the community calendar, so the new dinner options will often overlap with something else going on nearby.
The community calendar doesn't list venues for Oktoberfest, Food Truck Fridays or the Oct. 24 festival, so check event details closer to each date. The North Village Market cottages at 6301 Moonseed St. are also open for the 2026 season. Their six retailers include Moss Hill Bath and Body Collection, Lights By Emily, Simply Blessed Kids, Gem's Permanent Jewelry, Oh My Lollies and Wiggle Wow.
On a Food Truck Friday, the trucks run from 6 to 8 p.m., and Brisé seats dinner until 9. Marigold stays open until 10 that night once it opens. Brisé's hours make Monday and Tuesday Marigold's nights. On the Oct. 24 Fall Festival, the afternoon event ends at 5 p.m., half an hour after Brisé starts dinner service. On the Sundays left in the farmers market season, the market closes at 3 p.m., and both restaurants serve dinner Sunday evening.
The Peach Cobbler Factory has not yet announced hours, so whether it stays open late enough to follow dinner next door will depend on the schedule it posts closer to opening. Hours and menus at all three are new and could change in the first weeks, so check them before you go.
